This big burger is beautifully meaty with a bit of smokiness, so it needs something robust. Flying Scotsman has a lovely toasted roastiness, but it’s crisp, too, with enough character to cope with the smoky chipotle mayonnaise. The flavours fly across your tongue like the train itself.
